The processing

Bresaola is made by the most prestigious tender cuts from the beef hindquarter. It is one of the most excellent products from our Italian butcher’s tradition, one of the most recognizable symbols of High Quality Foods in the world. All people loving good foods are often curious to learn more about the history and processing of the products they are tasting. Here our flow chart:

  • hand trimming of each meat cuts
  • salting
  • resting and rubbing
  • drying
  • seasoning
  • packaging

It seems to be very simple but actually it is not so.
