The excellent selection of beef leg, that is, the so called choice loin cut (punta d'anca), has a delicate and sweet taste and a unique way of keeping its red and homogeneous colour always intact. This represents a mixture of the special recipe and handmade skill. It is prepared with no particular additives, has a significant output and it is always ready to be sliced. The process consists in the salting of meat, its curing period of time, rubbing and then its natural aging. Every step occurs under deep controls. We also produce the bresaola of the Valtellina valley labeled as PGI (Protected Geographical Indication).
