The 'Speck de Baita' comes from the pork thigh, which is lightly smoked and, after been cured for a period and rubbed, it is put into particular moulds to give it that shape, which makes it better to be sliced. It has a very delicious taste and it is even suitable for the most delicate palates.
The 'Speck de Baita' sits to get naturally aged in Folon, in the upper part of the Valtellina valley, for about 5 months.
